School’s Out for Summer!
Yesterday was South Burlington’s final day of classes- congratulations to all the students and educators who made it such a memorable year! For the past few weeks of school, over 200 Elementary Schoolers and their teachers visited the Common Roots Farm at South Village for an on-the-land experience with many of the plants we learned about through Farm-to-School. Students got to say hello to chickens, go on an herbal scavenger hunt, and prepare a delicious salad with freshly harvested plant friends grown on-site. By popular demand, here is the salad dressing recipe that we made with the petals of Chive flowers. Enjoy and be sure to pop on over to the farm this summer to check out the abundance of fresh, nutrient-dense produce we grow!
- 1/2 Cup of Extra Virgin Olive Oil
- 1/4 Cup of Red Wine Vinegar
- 2 teaspoons of Dijon Mustard
- 2 cloves of crushed garlic
- 4-8 Chive Flowers (depending on desire for spice), petals picked apart.
- Salt & Pepper to Taste
Mix all the ingredients together and refrigerate excess.
Kiddos who participate in School’s Out will have the opportunity to visit the farm as part of their “Choice Option” every Monday and I also invite families to sign up to cook your Sunday night dinner with me as part of Family Farm Visits- there are still spots open June 24th, July 8th, July 15th, July 22nd, and August 12th.
