This menu features the following local foods: VT Soy Tofu, Sweet Sound Aquaculture Shrimp, Maple Wind Farm, Vermont Bean Crafters, Bound Brook Farm Rice, and All Souls Tortilleria.
Feb 7th
Kefta (lamb and beef meatballs) served over Tabbouleh
House-made Kefta served over fresh tabbouleh, drizzled with a lemony yogurt sauce, and Tahini sauce topped with pickled cucumber rinds.
Falafel Served Over Tabbouleh
House-made falafel served over fresh tabbouleh and drizzled with a lemony yogurt sauce and a Tahini sauce topped with pickled cucumber rinds.

Eggplant Parmesan
Sliced eggplant, breaded and pan-fried then topped with house-made tomato sauce, melted fresh mozzarella cheese, and parmesan cheese with fresh herbs. This entree is served over house-made linguine, garlic focaccia, and a side of sauteed vegetables.
Chicken Parmesan
Maple Wind Farm’s chicken breast is breaded and pan-fried then topped with house-made tomato sauce, melted fresh mozzarella cheese, parmesan cheese, and fresh herbs. This entree is served over house-made linguine, garlic focaccia, and a side of sauteed vegetables.

Vegetarian/ Vegan Tofu Chilorio (lightly spiced and flavorful roasted tofu)
Tofu chilorio is slowly braised in onions, orange juice, cumin, oregano, and mild chili peppers. Served over Arroz a la Mexicana (like a Spanish rice) rice from Boundbrook Farm in Vergennes VT. This entree is with three, four-inch corn tortillas from All Souls Tortilleria in Burlington VT. Tortillas served on the side.

To date, we have sent over 1,300 balanced meals home with students which they have prepared for their family dinner.
